Corn Dodgers Recipe
By the ingredients alone, you would think that this is yet another corn bread recipe. But it is in how it is prepared that makes it different. I remember these as a child watching an old John Wayne movie. True Grit I think it was.

Ingredients
  • 2 cups yellow cornmeal
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 2 cups milk
  • 1 teaspoon baking powder

Directions
  1. Preheat oven to 400 degrees F.
  2. Cook cornmeal in a saucepan with butter, salt, sugar and milk until the mixture comes to a boil. Turn off heat, cover, and let stand 5 minutes.
  3. Add baking powder. Spoon the mix onto a greased cookie sheet in heaping tablespoon-size balls, then bake. Bake for 10 to 15 minutes. They are done when slightly brown around the edges.
  4. Cut laterally and fill with honey butter.
  5. Variations
  6. Add 2 tablespoons chopped jalapenos to the mix.
  7. Add 1/4 cup shredded sharp Cheddar cheese.
