Chicken Soft Tacos For Those Who Are Afraid Of Fish Tacos

- Fajita marinade: juice of 2 limes, juice of 1/2 a lemon,1 tablespoon teriyaki baste and glaze (I use wheat-free tamari or wheat-free soy sauce to make this gluten-free),1/2 tablespoon worcestershire sauce,1 tablespoon cumin,1 teaspoon lemon pepper, and 1 tablespoon garlic salt shopping list
- 4 boneless chicken breasts shopping list
- Crema: juice of 1 lime, 8 oz. sour cream, 1/4 c. milk, 2 t. minced garlic, 1/2 t. cumin, 2 T. minced cilantro leaves, 1 t. GREEN Tabasco sauce, salt and pepper to taste. shopping list
- cabbage slaw: 1 1/2 c. coleslaw mix, 3 T. chopped cilantro leaves, 1/4 c. thinly sliced red onion shopping list
- 8 refrigerated soft white corn tortillas shopping list
- Optional: sliced green onion, diced tomato, diced avocado shopping list
How to make it
- Mix all marinade ingredients. Marinate boneless chicken breasts several hours or overnight. Grill outdoors, slice across grain and proceed with recipe.
- Mix all crema ingredients and refrigerate.
- Mix all slaw ingredients and refrigerate.
- Assembly: microwave tortillas by wrapping them in a damp paper towel until they are soft and pliable. On each warm tortilla, put sliced chicken on half of the tortilla, add a layer of the cabbage slaw, a healthy drizzle of the crema, maybe some diced avocado, diced tomato, sliced green onions, and then fold over and serve. Delish.
- NOTE: You can make these with fish, too! I do.
