Chicken Soft Tacos For Those Who Are Afraid Of Fish Tacos Recipe

Ingredients
  • Fajita marinade: juice of 2 limes, juice of 1/2 a lemon,1 tablespoon teriyaki baste and glaze (I use wheat-free tamari or wheat-free soy sauce to make this gluten-free),1/2 tablespoon Worcestershire sauce,1 tablespoon cumin,1 teaspoon lemon pepper, and 1 tablespoon garlic salt
  • 4 boneless chicken breasts
  • Crema: juice of 1 lime, 8 oz. sour cream, 1/4 c. milk, 2 t. minced garlic, 1/2 t. cumin, 2 T. minced cilantro leaves, 1 t. GREEN Tabasco sauce, salt and pepper to taste.
  • Cabbage slaw: 1 1/2 c. coleslaw mix, 3 T. chopped cilantro leaves, 1/4 c. thinly sliced red onion
  • 8 refrigerated soft white corn tortillas
  • Optional: sliced green onion, diced tomato, diced avocado

Directions
  1. Mix all marinade ingredients. Marinate boneless chicken breasts several hours or overnight. Grill outdoors, slice across grain and proceed with recipe.
  2. Mix all crema ingredients and refrigerate.
  3. Mix all slaw ingredients and refrigerate.
  4. Assembly: microwave tortillas by wrapping them in a damp paper towel until they are soft and pliable. On each warm tortilla, put sliced chicken on half of the tortilla, add a layer of the cabbage slaw, a healthy drizzle of the crema, maybe some diced avocado, diced tomato, sliced green onions, and then fold over and serve. Delish.
  5. NOTE: You can make these with fish, too! I do.
