Cabbage Pickles Recipe
It's a "pickle" in the Japanese tradition, not the American one. Usually this woul dbe served as an accompanyment to the appetizer. Think of it as a side dish for the appetizer.

Ingredients
  • 1 lb white cabbage
  • 4 green onions
  • 1/2 c vinegar
  • 1/4 c dark soy sauce
  • 1 Tbsp sugar
  • Juice from 1/2 lemon
  • 1/2 tsp red chili pepper

Directions
  1. Shred the cabbage, and cut the onions into 1/2 inch long pieces.
  2. Combine the other ingredients in a large bowl and mix.
  3. Add vegetables to marinade.
  4. Cover with a dish that fits just inside the bowl and rests on the cabbage.
  5. Place weight on the dish, about 2 pounds, and let stand for at least 2 hours.
  6. Drain before serving.
