Toasted Jalapeno Tomatillo And Watermelon Salsa That Your Guests Wont Forget Recipe

This is an appetizer salsa to be served with your favorite chips...spicy, yet light and flavorful and delightfully tasty on chips such as blue corn tortillas...

Ingredients
  • 8-10 medium tomatillos parchment type wiht coating removed
  • 2 tbls vegetable oil of your choice
  • 1 onion minced
  • 2 garlic cloves minced
  • 3 jalapeno peppers or to taste seeded and chopped
  • 1 tablespoon ground cumin
  • 2 tablespoons mild chili powder
  • 1 cup tomato sauce or puree
  • 1 cup fresh watermelon chunks
  • salt and pepper to taste

Directions
  1. Cut tomatillos into quarters
  2. Heat oil in a large heavy saute pan over medium heat
  3. add onion and saute for few minutes
  4. Add tomatillos, garlic and jalapenos
  5. Saute until the onion and garlic begin to brown
  6. Reduce the heat to low and sprinkle cumin and chili powder over the pan
  7. Stir in tomato sauce and bring to a simmer
  8. remove from the heat and let cool
  9. Now
  10. Place the mixutre in a blender or your food processor and add watermelon adn puree
  11. Season to taste with salt and pepper and makes about three cups or so...
  12. Your guests won't forget you!!!
