How to make it

  • In 4 quart saucepan combine beans and 2 quarts water then boil 2 minutes.
  • Remove from heat and cover then let stand 1 hour then add onion and bring to a boil.
  • Cover then reduce heat and simmer 1-1/2 hours.
  • Cut several slices smoked sausage and set aside then dice remaining sausage.
  • Drain beans and reserve liquid.
  • Combine all ingredients except beans and mix well then gently stir in drained cooked beans.
  • Bake at 300 for 2 hours adding reserved bean liquid as needed.
  • Garnish with reserved sliced sausage.
