I made this up to go with some grilled salmon and boy it sure turned out a lot better than I expected! A nice twist off the old scalloped potatoes. (Sorry no picture, we dug in before the camera came out)

Wow this sounds great. I'm a huge sweet potato fan. Saving for a special dinner. I usually use the microwave to cut down on cooking time for the potatoes and squash. I don't think it will hurt any in the casserole. Do you?

Wow, I am impressed. Avery unique recipe idea. Do you grow your own sweet potatoes and squash? I'm not sure what climate you need for sweet potatoes.

I really like this recipe, it's good for me as I am diabetic and this looks like it has a lowish GI, and it also sounds delicious. (I'm not allowed mashed potatoes - sob).
