Blood Orange Margarita Recipe

Ingredients

5 ice cubes

1 blood orange - juiced (reserve a slice of peel for garnish)

1 lime - juice (reserve the husk to wet the rim of the glasses)

3 oz of Tequila of your choice

1 oz Triple Sec

1 Tbsp sugar

1 egg white

2 Tbsp water

1 Tbsp coarse salt - for the rim

Directions

Wet the rims of your margarita glasses with the spent lime husk and dredge only the rim in the coarse salt to lightly coat. Set aside.*if you choose not to rim the glasses with salt make sure you add a pinch of salt to the blended drinks - the salt is key in balancing the flavours

Place ice in blender and crush for 30 seconds.

Add remaining ingredients and purée until the egg white becomes a beautiful foam - about 2 minutes.

Taste for seasoning and add more sugar if required (or salt - see above)

Pour into glasses, garnish with peel and serve immediately.
