Nice ovo-lacto vegetarian dinner, also could be great for a brunch. Really wonderful combination of flavors. We love this served with a nice salad for dinner.

Ingredients
  • For the Crust:
  • 2C (packed) grated raw potato (I love this with yukon gold potatoes, but Idaho bakers will do lovely)
  • 1/4 C grated onion
  • 1/2 t. salt
  • 1 egg white lightly beaten
  • flour for your fingers
  • a little oil
  • For the Filling (I make this while the crust is baking):
  • 1 medium head of cauliflower chopped small
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil or butter
  • 1 tsp thyme leaves (I used dry, but if you want to use fresh just up the amount a bit)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 eggs
  • 1/4 cup milk
  • 1/2 to 1 cup grated cheddar cheese

Directions
  1. The Crust:
  2. -Heat your oven to 400f.
  3. -Generously spray a 9 inch pie tin with pan spray (the potato crust does tend to stick).
  4. -Combine grated potatoes and onion, salt and egg white in a small bowl and mix well.
  5. -Transfer to the pie pan and pat into place with lightly floured fingers building up the sides into a nice crust.
  6. -Bake for 30 minutes, remove from the oven, brush the crust with a little oil and return to bake for about 10 minutes more. The oil will help crisp up the crust a bit. Remove from oven and turn your oven down to 375f.
  7. The Filling:
  8. -Heat the olive oil or butter in a large skillet. Add onion, garlic. salt, pepper and thyme, and saute over medium heat for about 5 minutes. Add cauliflower, stir and cover.
  9. -Cook until tender, stirring occasionally (about 8-10 min.)
  10. -Spread half the cheese onto the baked crust (it is ok if the crust is still hot). Spoon the sauteed vegetables on top, then sprinkle with remaining cheese. Beat the eggs and milk together, and pour this over the top (this mixture will not completely cover the cauliflower, but it is enough).
  11. -Bake 35-40 min, or until set. Serve hot or warm.

Made this for dinner last night. Great taste...but man, does the crust stick! Needs to be cooked in the dish it will be served in as getting it out of the dish was too difficult. Will try again in different dish.


I came by to say thank you for trying and LIKING the sesame noodle recipe and found this gem. Oh yeah...gonna try this out. After reading about the sticking crust, I think I'll try lining the pie plate with that new non-stick Reynolds wrap and see what happens.

Just made this pie for my daughters 21st birthday dinner, and it was enjoyed by all. Used Crisco on the pie pan and the pieces came out nicely after a short cool down period. Received some suggestions to add potato and broccoli with the cauliflower. Sounds good and will also try it this way. Thanks for the great recipe!

Alterations


1. Line the pie plate with Reynolds non stick aluminum foil.
2. Put the grated potato in a dish towel and wring out as much liquid as you can before mixing with the egg white and salt.
3. Season the cauliflower with salt and pepper. It's a bit flat without it.
4. Instead of using grated cheese on the crust and over the cauliflower, I 'm going to make a simple Mornay sauce (cheese sauce). I think the dish will have more flavor and will be a bit more moist.
