Easy Greek Spinach Pie Recipe

I had some leftover phyllo dough so I made up this recipe in order to use it up. The meal was a resounding success! Enjoy.

Ingredients
  • 4 boneless/skinless Chicken breasts
  • 1 large onion
  • 2-3 cloves minced garlic
  • 2 tbsp. olive oil
  • 2 lbs. frozen spinach, thawed and drained
  • 1/4 tsp. nutmeg
  • 1/2 tsp. red pepper flakes
  • 1-2 tbsp. chopped fresh oregano (or 1-2 tsp. dried)
  • 1/2 tsp. Polly's Signature Spice Blend (see link below)

  • 1 1/2 cups crumbled feta cheese
  • 4 eggs, lightly beaten
  • Salt and pepper to taste ( I used 1 tsp. Kosher salt and 1/2 tsp. freshly ground black pepper)
  • 20 sheets 9x13 phyllo dough

Directions
  1. Boil the chicken breasts until no longer pink. Shred and set aside.
  2. Saute onion and garlic in olive oil until tender.
  3. In a bowl, combine the chicken, spinach, onion, garlic, spices, cheese and eggs.
  4. Layer a 9x13 pan with 10 phyllo sheets. When working with phyllo, be sure to brush with olive oil or melted butter between each sheet.
  5. Spread the spinach mixture, evenly, over the phyllo sheets.
  6. Top with remaining phyllo.
  7. Bake in a 375 oven for 45 minutes or until the top is nicely browned.

This sounds great....Could you tell me what Polly's Spice blend consists of? I've never heard of it and was wondering if I could make my own or if the dish be okay without it...Thanks
