Elote Mexican Corn On The Cob

- 3 tablespoons mayonnaise (fat free is fine) shopping list
- 2 teaspoons fresh lime juice (optional) shopping list
- 2 tablespoons finely grated parmesan cheese shopping list
- 1/2 teaspoon chili powder shopping list
- 1/4 teaspoon ground red pepper shopping list
- 1/4 teaspoon ground cumin shopping list
- 1/8 teaspoon salt shopping list
- 4 ears corn, shucked shopping list
How to make it
- Prepare grill.
- Combine mayo and juice (if using) in a small bowl.
- Combine cheese and seasonings in another small bowl.
- Place corn on grill rack that has been sprayed with cooking spray.
- Grill corn 12 minutes or until tender, turning frequently.
- Remove from grill and brush with mayo mixture, and sprinkle with cheese mixture.
- Serve immediately.

We've done something similar to this several times. When the mayo mixture hits the hot corn it takes on a sweetness that I didn't expect- but it was great. Never had a recipe, so thanks for giving us this one. 5
