The February, 2009 Good Housekeeping magazine issued this recipe as a side dish; however, it could easily serve as a main dish as far as I'm concerned. You decide!

Ingredients
  • 1 large bunch (1 1/4 pounds) Swiss chard, washed and trimmed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1/4 cup golden raisins
  • Salt to taste
  • 2 tablespoons pignoli nuts (pine nuts), toasted

Directions
  1. Cut ribs and stems from chard, cut in 1/2" pieces and set aside.
  2. Cut leaves into 2" pieces and place in colander to drain.
  3. In Dutch oven heat oil on medium heat.
  4. Add onion and chard ribs/stems.
  5. Cook until tender stirring occasionally, 7 to 9 minutes.
  6. Add drained chard leaves, raisins and 1/4 teaspoon salt.
  7. Cover and cook 2 to 3 minutes OR until leaves are tender.
  8. Remove Dutch oven from heat and stir in pignoli.

Just got another bunch of swiss chard from my community agriculture group and this is the one I'm going to try tomorrow night. Saw something similar on another site but now I know I'll be able to find it for sure. Thanks!
