Ingredients

2 eggs

2 cups sugar

1 can (20 oz.) crushed pineapple, undrained

2 cups all-purpose flour

2 tsp. baking soda

1 tsp. vanilla extract

1/2 cup chopped walnuts

Frosting

1 8 oz. pkg. cream cheese, softened

1 stick butter, softened

1 3/4 cups confectioner's sugar

1 tsp. vanilla

1/2 cups chopped walnuts

Directions

Preheat oven to 350 degrees.

Mix eggs, sugar, pineapple, flour, baking soda and vanilla together.

Stir in nuts.

Pour into 9 x 13" baking dish sprayed with non-stick spray.

Bake 25 minutes.

Cool.

Frosting

Mix cream cheese, butter, confectioners sugar and vanilla until creamy.

Spread over cooled cake.

Sprinkle with nuts.

Nuts can be mixed into icing before applying to cake.

When I went to FL for book signings my wonderful friend Lillian made this cake for my visit. It was so delicious that I couldn't get enough. She finally sent the recipe and I believe you will all love it too. It's just in time for Mother's Day.
