Hot Potatoes

I'm always looking for different ways to do potatoes...This is one of my faves
Ingredients
- 5 medium red potatoes shopping list
- 2 tbls. olive oil shopping list
- 1/4 cup onion, chopped shopping list
- 2 cloves garlic, finely chopped shopping list
- 1-4 oz can green chilies shopping list
- 5 eggs shopping list
- 1 cup monterey jack cheese, shredded shopping list
- 1 cup cheddar cheese, shredded shopping list
- Crushed red pepper, to taste shopping list
- salt and pepper to taste shopping list
- sour cream, to garnish shopping list
- salsa, to garnish shopping list
How to make it
- Preheat oven to 375
- Slice potatoes to 1/4 inch slices
- Boil until soft but still firm
- Saute onion and garlic in olive oil until tender
- Add green chilies and set aside
- In mixing bowl beat eggs
- Stir in veggie mixture, salt and peppers and cheeses
- Grease 9 inch pie plate
- Layer potatoes on bottom pan
- Cover potatoes with half of egg/cheese mixture
- Add another layer of potatoes
- Top with remaining egg/cheese mixture
- Bake 30-35 minutes until golden brown
- Garnish with sour cream and salsa
