Ingredients

5 medium red potatoes

2 tbls. olive oil

1/4 cup onion, chopped

2 cloves garlic, finely chopped

1-4 oz can green chilies

5 eggs

1 cup Monterey Jack Cheese, shredded

1 cup Cheddar Cheese, shredded

Crushed red pepper, to taste

Salt and pepper to taste

Sour cream, to garnish

Salsa, to garnish

Directions

Preheat oven to 375

Slice potatoes to 1/4 inch slices

Boil until soft but still firm

Saute onion and garlic in olive oil until tender

Add green chilies and set aside

In mixing bowl beat eggs

Stir in veggie mixture, salt and peppers and cheeses

Grease 9 inch pie plate

Layer potatoes on bottom pan

Cover potatoes with half of egg/cheese mixture

Add another layer of potatoes

Top with remaining egg/cheese mixture

Bake 30-35 minutes until golden brown

Garnish with sour cream and salsa
