Ingredients
  • 1 package frozen spinach (thawed and drained)
  • 1 can artichoke hearts (cut and drained)
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1 minced garlic clove (or garlic paste to taste)
  • 3/4 cup Parmesan cheese
  • Wheat thins or favorite crackers

Directions
  1. Mix all the ingredients in a bowl
  2. Pour into an 8" or 9" pie plate and bake at 375 degrees for 25-30 minutes
  3. Serve with wheat thins or favorite crackers

This is almost the same way I make my spinach and artichoke dip and it is the best!!! I remove any tough or discoloured artichoke leaves, then finely chop. I also add a little more garlic because I am a garlic lover ;-)


Mmmmm, my two favorite veggies -- I knew I was going to love this dip! I think it's great as a raw-veggie dip, too.
