Spinach Apple Raisin Stuffed Double Pork Chops Recipe

These were BIG luscious double pork chops on sale. I made a creamy brown pork pan gravy to go with and a plum tomato and red onion salad with oil and oregano. Serves 2 hungry people or 4 moderate eaters.

Ingredients
  • 2 double pork chops
  • 1 1/2 cup home-made bread crumbs (if you have)
  • fresh BABY spinach (courtesy or Shine)washed and de-ribbed slightly
  • 2 cloves of garlic
  • pinenuts
  • 1 apple (peeled and chopped small-lice a dice)
  • 1/4 cup white raisins (optional, but juicy)
  • chicken broth
  • sprinke of ground chili pepper
  • fresh basil leaves
  • butter and oil for frying
  • onion juice from a grated onion

Directions
  1. PREPARE THE INGREDIENTS
  2. gently rinse chops and holding from the bone side use a filet knife to make a deep pocket to the bone
  3. rub with Lucini Olive Oil and set aside
  4. Heat a frying pan and toast pine nuts for a few minute and remove to a large bowl
  5. Melt butter in pan and a sppoon of olive oil
  6. Add 10 fresh bay leaves and fry until slightly crisp-remove to bowl
  7. Add mashed or cut very small garlic cloves
  8. add your washed de-ribbed (only takes a bit) spinach and quickly saute
  9. remove to bowl
  10. small amount of broth and saute apples and raisins quickly with onion juice
  11. remove to bowl
  12. Fold all stuffing ingredients gently together. add chili pepper and kosher salt as desired
  13. Make sure pockets in chops are deep
  14. Carefully stuff each chop until it looks like the picture
  15. Cook on low heat in the same pan , covered to your desired doneness
  16. You will need 2 spatulas to turn
  17. Remove cover and let the one side brown for 2 minutes
  18. medium heat after you turn until slightly browned.
  19. Make a quick pan gravy adding flour broth and cream if desired
  20. Let's eat!
