Cleaning out the fridge Sunday while making burgers. Was gonna call them Tail End Burgers, cause I used the "tail ends" of stuff that needed to be used...LOL Just guessing at measurements - use what you have/like...wouldn't need to be exact.

Ingredients
  • 1 oz sliced mushrooms, chopped
  • 1/2 white onion, chopped
  • 1 T margarine
  • 1 T EVOO
  • 3 lbs ground sirloin, 85% lean
  • 2 oz jarred roasted red peppers, chopped
  • 1/4 c parmesan cheese
  • 1/2 c shredded mozzerella
  • 2 T chopped garlic
  • Seasoned Salt
  • Garlic Pepper
  • Dash red pepper flakes
  • 3 T Dry ranch dressing
  • 4-5 T worcestershire
  • 2 t liquid smoke
  • **
  • Sliced tomatoes
  • Good Dill Pickles
  • Sliced Cheese (I had cheddar, he had pepper jack)
  • Romaine Lettuce
  • Onion Sandwich Rolls
  • Spicy Mustard
  • Dukes Real Mayo

Directions
  1. Saute onions and mushrooms in margarine and EVOO (can add garlic here if you want)
  2. Mix all ingredients from meat down to tomatoes by hand - including drained, sauteed veggies
  3. Shape into 8 patties about 1/2 inch thick (they will draw up a little as they cook, and be thicker)
  4. Grill to desired doneness, about 8 - 10 minutes each side for light brown throughout burger - Turn only once, and don't mash with the flipper!!
  5. Add cheese to allow it to melt
  6. Let burger rest about 8 minutes
  7. Build burger on bun with desired condiments
  8. ** If I'd had the tail end of some bacon, I would have added it!
  9. *** Next time, I will throw in an egg, some seasoned bread crumbs, shape it into a loaf, and microwave it 20 minutes for a meatloaf!

Sounds great!
You mentioned the burgers may draw up and get thicker. To prevent them from turning into balls, I shape them a bit thinner in the center than around the edges. It sounds goofy but it works.

Lori, when you say: "Mix all ingredients from meat down to tomatoes," I'm assuming you mean up to the tomatoes, right?
