Spinach Soup

- 1 (16 oz.) package frozen (thawed) chopped spinach shopping list
- 2 c. of chicken broth shopping list
- 3/4 c. of plain yogurt shopping list
- 2 slices lemon(cut in half for garnish ) shopping list
- 1/2 tbsp. of butter or margarine shopping list
- 1 finely chopped medium onion shopping list
- 2 tsp. of all-purpose flour shopping list
- 1/3 tsp. of salt shopping list
- 1/4 tsp. of dried tarragon shopping list
- 1 dash ground nutmeg shopping list
- 1 dash cayenne pepper shopping list
How to make it
- Start by adding butter to a large pan over medium flame.
- Saute the onion, cooking until tender.
- Now add the flour, salt, tarragon, nutmeg, and cayenne(several min.)
- Then add in the spinach and chicken broth.
- Let this come to a boil, then reduce the flame for approx. 15 min.
- Then remove soup from flame and run through the food processor.
- Return to pot and let heat back up.
- Whisk in some yogurt.(may need extra salt and pepper)
- Ladle into bowls and serve.
