Ingredients

How to make it

  • Start by adding butter to a large pan over medium flame.
  • Saute the onion, cooking until tender.
  • Now add the flour, salt, tarragon, nutmeg, and cayenne(several min.)
  • Then add in the spinach and chicken broth.
  • Let this come to a boil, then reduce the flame for approx. 15 min.
  • Then remove soup from flame and run through the food processor.
  • Return to pot and let heat back up.
  • Whisk in some yogurt.(may need extra salt and pepper)
  • Ladle into bowls and serve.

    I fixed this up today and it is a lovely, fresh flavorful soup perfect for a beautiful spring luncheon. This is the nutrition info for the ingredients I used in fixing it up. I made a few substitutions for what I had on hand and am showing the recipe as I made it under alterations.
