Ingredients
  • 3 cups water
  • 1 1/2 cups sugar
  • 1/3 cup lemon juice
  • 1 tbsp vanilla
  • 6 medium peaches, halved and pitted
  • For mousse:
  • 1/2 cup ricotta cheese
  • 1/4 cup cream cheese
  • 3 tbsp confectioners sugar
  • 1 1/2 tsp lemon rind
  • 1/2 tsp vanilla

Directions
  1. Combine first 4 ingredients in large glass mixing bowl. Microwave on high for 10 minutes. Stir until sugar dissolves. Add peach halves to syrup and microwave on high for 4 minutes. Refrigerate covered overnight.
  2. Beat all mousse ingredients together, cover and refrigerate.
  3. When ready to serve, place peach halves on serving plate cut side up. Spoon mousse into pit cavity and sprinkle with nutmeg.

Oh....this sounds lovely!!! I'll have to try this! Maybe I'll add a little rum to the poached peaches!


This was very good! I made it as written except I added a splash of rum and some cranraisins to the poaching liquid. I wouldn't call the white cheese a mousse because it wasn't fluffy, but it was very good! I love sweetened ricotta! I had this for breakfast instead of dessert! It is very refreshing and not overly sweet! I added my photo!


This is a must try!
