How to make it

  • Combine first 4 ingredients in large glass mixing bowl. Microwave on high for 10 minutes. Stir until sugar dissolves. Add peach halves to syrup and microwave on high for 4 minutes. Refrigerate covered overnight.
  • Beat all mousse ingredients together, cover and refrigerate.
  • When ready to serve, place peach halves on serving plate cut side up. Spoon mousse into pit cavity and sprinkle with nutmeg.

    This was very good! I made it as written except I added a splash of rum and some cranraisins to the poaching liquid. I wouldn't call the white cheese a mousse because it wasn't fluffy, but it was very good! I love sweetened ricotta! I had this for breakfast instead of dessert! It is very refreshing and not overly sweet! I added my photo!

    Oh....this sounds lovely!!! I'll have to try this! Maybe I'll add a little rum to the poached peaches!
