Fast And Easy Haddock Au Gratin Recipe
This is an easy weeknight meal that is ready in a flash. I serve it with a white and wild rice blend and a nice green salad.

Ingredients
  • 1 1/2 to 2 pound haddock fillets or other firm white fish
  • 1 can cream of cream of celery soup (I used reduced sodium)
  • 1/2 cup milk
  • 2 Tbsp. sherry
  • 1/2 cup shredded mild Cheddar cheese
  • 1 1/2 cups bread crumbs tossed with 3 tablespoons melted butter
  • 1 Tbsp. fresh parsley

Directions
  1. Arrange haddock in a shallow buttered baking dish. Combine soup with milk in a saucepan over medium low heat and heat through. Add sherry and stir to combine. Pour soup mixture over the fish. Sprinkle with shredded cheese.Combine parsley and buttered bread crumbs. Bake for 10 to 15 minutes, or until golden on top and fish is flaky and cooked through.

I wisah i would have seen this 2 nights ago, i cooked the same old same old haddock... lemon, wine, tarragon, butter, thin slices of peppers.... this sound way better!
