Ingredients

1/2 c mayonnaise

1 Tbs. apple cider vinegar

2 tsp dijon mustard

1/2 tsp sugar

4 c coleslaw mix

1/4 c chopped red onions

1/2 c thousand island dressing

1 baguette

3/4 lb. sliced pastrami

11/2 c shredded Swiss cheese

Directions

Heat oven to 350. In large bowl,whisk together mayonnaise,vinegar,mustard and sugar until blended. Season with 1/2 tsp salt,if desired.. add coleslaw mix and red onions;toss gently to coat.

Divide dressing evenly among baguette slices(about 2 Tbs.ea.);place on baking sheet. Divide coleslaw mixture and pastrami evenly among baguette slices. Sprinkle evenly wit Swiss cheese. Bake 5 mins.,or until cheese is melted. Garnish with red pepper curls,if desired
