How to make it

  • To get sauce ready, blanch basil leaves in boiling water for 10 seconds. Drain.
  • Put basil in ice water, drain and pat dry
  • Place basil and broth in blender, process intill smooth
  • Let stand at room temp 2 hours
  • Strain through a sieve into a bowl, discard solids
  • Add vinegar and garlic salt, stirring with a whisk
  • To prepare salad arrange yellow and red tomatos alternately in a large serving dish
  • Drizzle with basil sauce, sprinckle with cheese and pepper
  • Top with half cup basil
  • Serve immediately

    Sounds really interesting and very tasty, I'm going to try it ;)

    In Italy they have a salad dish called "Insalata Caprese" which consists of layering on a platter a Tomato slice, a Mozzarella slice and a Basil leaf and so on... Google it for images, it's really simple and it's found all over the place. Many people have that with a bread roll for lunch drizzling it with olive oil and salt. There are some slight variations too, but that's the basics. Very plain, not as tasty as yours must be! ^_^

    I like the idea of how you did the sauce. Cooking the basil, got to try that.. AND WE NOW HAVE FRESH mozzarella cheese in the Rio Grande Valley! Whoo wahhhh. My mouth is watering!
