Ingredients
  • 1 pineapple, peeled, cored, halved lengthwise and sliced into 12 wedges (about 1 ½ lbs)
  • 2 Tbl butter, melted
  • ¼ C packed light brown sugar
  • ¼ C dark rum (Capt. Spiced would be good too)
  • ¼ tsp ground cinnamon
  • Cooking spray
  • Flaked, sweetened coconut, toasted (optional)
  • Vanilla Light Ice Cream(optional)

Directions
  1. Prepare grill
  2. Brush pineapple wedges with 2 Tbl butter
  3. Combine brown sugar, rum and ¼ tsp cinnamon in a microwave safe bowl
  4. Microwave on high 1 ½ minutes or until sugar dissolves
  5. Place pineapple on grill rack coated with cooking spray
  6. Grill 3 minutes each side or until grill marks form and heated through
  7. Top with toasted coconut and serve with ice cream if desired
  8. 6 servings (2 wedges)
