Ingredients

How to make it

  • Prepare grill
  • Brush pineapple wedges with 2 Tbl butter
  • Combine brown sugar, rum and ¼ tsp cinnamon in a microwave safe bowl
  • Microwave on high 1 ½ minutes or until sugar dissolves
  • Place pineapple on grill rack coated with cooking spray
  • Grill 3 minutes each side or until grill marks form and heated through
  • Top with toasted coconut and serve with ice cream if desired
  • 6 servings (2 wedges)

    I love to eat fresh pineapple that's been "marinating" in rum in the summertime - now I can kick it up with this new twist...love it, Pat!
