Rum Spiked Grilled Pineapple

- 1 pineapple, peeled, cored, halved lengthwise and sliced into 12 wedges (about 1 ½ lbs) shopping list
- 2 Tbl butter, melted shopping list
- ¼ C packed light brown sugar shopping list
- ¼ C dark rum (Capt. spiced would be good too) shopping list
- ¼ tsp ground cinnamon shopping list
- cooking spray shopping list
- Flaked, sweetened coconut, toasted (optional) shopping list
- vanilla Light ice cream(optional) shopping list
How to make it
- Prepare grill
- Brush pineapple wedges with 2 Tbl butter
- Combine brown sugar, rum and ¼ tsp cinnamon in a microwave safe bowl
- Microwave on high 1 ½ minutes or until sugar dissolves
- Place pineapple on grill rack coated with cooking spray
- Grill 3 minutes each side or until grill marks form and heated through
- Top with toasted coconut and serve with ice cream if desired
- 6 servings (2 wedges)
