How to make it
- Pierce potatoes with fork. Microwave on high 10-12 mins. When cool enough to handle,cut each in half lengthwise,scoop out pulp,leaving 1/4" thick shell.
- In bowl,mash potato pulp with butter,1c cheddar cheese,scallions,parsley,chili powder and salt. Cut each potato shell in half lengthwise. Divide potato mixture evenly among shells,using about 2 Tbs for each. Sprinkle tops with remaining 1/2c cheddar. Microwave on high just till cheese is melted.,about 1 to 2 mins.
