Warm German Herb Potato Salad Recipe

Ingredients
  • 2 pounds small new potatoes washed well and cut into eighths
  • 7 slices bacon cut into 1/4" strips
  • 1 small red onion finely chopped
  • 1/2 teaspoon granulated sugar
  • 2- 1/2 tablespoons apple cider vinegar
  • 1/4 cup chicken stock
  • 1 tablespoon parsley chopped
  • 1 tablespoon rosemary chopped
  • 1 tablespoon thyme chopped

Directions
  1. In large saucepot cover potatoes with salted water by 1”.
  2. Bring to a simmer and cook until soft approximately 8 minutes.
  3. While potatoes are cooking heat a large nonstick sauté pan over medium high.
  4. Cook bacon until crispy and golden brown then remove bacon leaving 3 tablespoons fat in pan.
  5. Sauté onions over medium high heat until onions are soft about 3 minutes.
  6. Add 1-1/2 tablespoons of the vinegar, sugar and stock and simmer 3 minutes over medium heat.
  7. Drain potatoes and in a large bowl put potatoes in with the onion mixture.
  8. Season with salt and pepper then add remaining vinegar and chopped herbs.
  9. Serve warm or at room temperature.
