How to make it

  • In large saucepot cover potatoes with salted water by 1”.
  • Bring to a simmer and cook until soft approximately 8 minutes.
  • While potatoes are cooking heat a large nonstick sauté pan over medium high.
  • Cook bacon until crispy and golden brown then remove bacon leaving 3 tablespoons fat in pan.
  • Sauté onions over medium high heat until onions are soft about 3 minutes.
  • Add 1-1/2 tablespoons of the vinegar, sugar and stock and simmer 3 minutes over medium heat.
  • Drain potatoes and in a large bowl put potatoes in with the onion mixture.
  • Season with salt and pepper then add remaining vinegar and chopped herbs.
  • Serve warm or at room temperature.
