Baked King Edwards Topped With Garlic Mushrooms

- 3 x 8oz King Edward potatoes - suitably scrubbed shopping list
- 1/2oz butter shopping list
- 2 Tbsp cream cheese shopping list
- 3 cloves, crushed garlic shopping list
- 8oz sliced mushrooms shopping list
- 2 Tbsp freshly chopped herbs (parsley, rosemary & thyme) shopping list
- a pinch of salt shopping list
- a few grinds of freshly ground black pepper shopping list
How to make it
- Scrub the potatoes and place in a pre-heated oven at approx 200°C.
- Cook for 1 hour until cooked thoroughly.
- When once the potatoes have been cooking for about 45 minutes, melt the butter in a saucepan, add the garlic and mushrooms and cook gently for 5 - 10 minutes.
- Stir in the cream cheese & continue cooking for a minute. Add the herbs and season to taste.
- After the potatoes are cooked cut them almost in half lengthways and spoon in the mushroom and garlic sauce.
