How to make it

  • Scrub the potatoes and place in a pre-heated oven at approx 200°C.
  • Cook for 1 hour until cooked thoroughly.
  • When once the potatoes have been cooking for about 45 minutes, melt the butter in a saucepan, add the garlic and mushrooms and cook gently for 5 - 10 minutes.
  • Stir in the cream cheese & continue cooking for a minute. Add the herbs and season to taste.
  • After the potatoes are cooked cut them almost in half lengthways and spoon in the mushroom and garlic sauce.

    I love mushrooms myself, and have a recipe with fresh Chanterelles, but I use mashed potaotes. This will be nice to try, as it's something different and simple.

    I love the things and so does my family, but I appreciate we all have aversions to some things. I'm sure it will still be pretty good without the mushrooms. Let me know if you try it.

    Personally, I can't stand rice pudding, sheep's brains, pickled beets or liver.

    This idea sounds good, except for the mushrooms. I can no longer tolerate mushrooms in my food but the rest sounds delish.
