Baked potatoes in their jackets make a delicious and healthy base for different meals. By adding different fillings the potato can be used again & again but with great variety. The King Edward is a classic type potato, perfect for this dish.

This idea sounds good, except for the mushrooms. I can no longer tolerate mushrooms in my food but the rest sounds delish.

Personally, I can't stand rice pudding, sheep's brains, pickled beets or liver.

I love mushrooms myself, and have a recipe with fresh Chanterelles, but I use mashed potaotes. This will be nice to try, as it's something different and simple.
