Fagiolini alla greca

- 1 pound or .5 kilo fresh green beans shopping list
- 1 clove garlic, very finely minced shopping list
- 1 tablespoon good olive oil shopping list
- salt to taste shopping list
- 1 ripe tomato, seeded and diced into 1/2" or 2 cm squares shopping list
How to make it
- Top and tail the green beans.
- Bring a large pot of water to a boil and add about 1.5 teaspoons of salt to it.
- Put the green beans into the boiling water and bring it back to a boil.
- Boil them for about 2 minutes, until just tender crisp.
- Drain the beans into a colander.
- Put the pot back onto the flame and add the olive oil, then the minced garlic, then the beans, and toss them together to just wilt the garlic.
- Add the tomato cubes and toss just to mix. Taste for salt and correct.
- Serve hot.
