Fagiolini Alla Greca Recipe
A pretty and delicious way to serve summer green beans

Ingredients
  • 1 pound or .5 kilo fresh green beans
  • 1 clove garlic, very finely minced
  • 1 tablespoon good olive oil
  • salt to taste
  • 1 ripe tomato, seeded and diced into 1/2" or 2 cm squares

Directions
  1. Top and tail the green beans.
  2. Bring a large pot of water to a boil and add about 1.5 teaspoons of salt to it.
  3. Put the green beans into the boiling water and bring it back to a boil.
  4. Boil them for about 2 minutes, until just tender crisp.
  5. Drain the beans into a colander.
  6. Put the pot back onto the flame and add the olive oil, then the minced garlic, then the beans, and toss them together to just wilt the garlic.
  7. Add the tomato cubes and toss just to mix. Taste for salt and correct.
  8. Serve hot.

I hope I can find some fresh green beans and tomatoes this weekend at our farmers market - it may be a bit early for our tomatoes here, but I'm keeping my fingers crossed. I love the combination in this post...thanks!
