Ingredients

How to make it

  • Top and tail the green beans.
  • Bring a large pot of water to a boil and add about 1.5 teaspoons of salt to it.
  • Put the green beans into the boiling water and bring it back to a boil.
  • Boil them for about 2 minutes, until just tender crisp.
  • Drain the beans into a colander.
  • Put the pot back onto the flame and add the olive oil, then the minced garlic, then the beans, and toss them together to just wilt the garlic.
  • Add the tomato cubes and toss just to mix. Taste for salt and correct.
  • Serve hot.

    I hope I can find some fresh green beans and tomatoes this weekend at our farmers market - it may be a bit early for our tomatoes here, but I'm keeping my fingers crossed. I love the combination in this post...thanks!
