Ingredients

Bacon, enough to completely line the pan, approx 11 - 12 slices

9 whole eggs

onion or shallot greens (amount to your preference)

1/4 tsp fried rosemary (or 1 tsp fresh)

salt & pepper to taste

Directions

Arrange the bacon as illustrated

bake at 350*F until crisp

remove from oven, and drain off the excess fat

Lower oven temp to 325*F

combine the eggs, rosemary, onion greens and salt/pepper

mix well

pour mixture into the pan, and bake until set

served hot or cold, this is your preference!

Variation:

add some grated Old, Mozzarella, or Swiss cheese, or all three
