Donnas Pollo With Mushrooms Ala Mexican Sauce

- 1 cup rice (2 cups cooked) I make a lot because I like to have it leftover shopping list
- 1 Tbls. olive oil (or less) shopping list
- 1/2 cup chopped onion (approx.) shopping list
- 1/2 chopped red bell pepper shopping list
- 2 boneless skinless chicken breasts, cubed shopping list
- 1 cup chicken broth shopping list
- 1 - 7 3/4 oz. can of El Pato mexican hot tomato sauce shopping list
- sliced fresh mushrooms ( I used a little over half the 8 oz. carton) shopping list
- 1/2 tsp. Mexican oregano shopping list
- 1/2 tsp cumin shopping list
- salt to taste shopping list
- Shredded cheddar (optional) shopping list
- Fresh cilantro (optional) shopping list
- sour cream (optional) helps cut the "heat" shopping list
- ENOUGH WITH THE OPTIONS! shopping list
- That's all! It's very low fat (basically none w/o the olive oil) so adding the cheddar and light sour cream doesn't hurt a bit. shopping list
How to make it
- Start rice cooking according to directions
- In large non-stick pan add olive oil (if using) and onions and bell pepper, saute over medium heat just till al dente (or more if you prefer, we like it a little firm)
- Remove and set aside
- Add cubed chicken breast and brown till just done - doesn't take long
- Here is where I sprinkle Wondra (greatest invention since sliced bread) quick mixing flour over the chicken to absorb the "juices" that come from the chicken - we like a thicker sauce
- Add chicken broth and El Pato
- Add the cumin and oregano, salt to taste
- Add mushrooms and simmer till done
- That's it!
- Serve atop the rice, top with the cheddar, sour cream, and cilantro if desired
