Ingredients

How to make it

  • Start rice cooking according to directions
  • In large non-stick pan add olive oil (if using) and onions and bell pepper, saute over medium heat just till al dente (or more if you prefer, we like it a little firm)
  • Remove and set aside
  • Add cubed chicken breast and brown till just done - doesn't take long
  • Here is where I sprinkle Wondra (greatest invention since sliced bread) quick mixing flour over the chicken to absorb the "juices" that come from the chicken - we like a thicker sauce
  • Add chicken broth and El Pato
  • Add the cumin and oregano, salt to taste
  • Add mushrooms and simmer till done
  • That's it!
  • Serve atop the rice, top with the cheddar, sour cream, and cilantro if desired
