Ingredients
  • 1 cup rice (2 cups cooked) I make a lot because I like to have it leftover
  • 1 Tbls. olive oil (or less)
  • 1/2 cup chopped onion (approx.)
  • 1/2 chopped red bell pepper
  • 2 boneless skinless chicken breasts, cubed
  • 1 cup chicken broth
  • 1 - 7 3/4 oz. can of El Pato mexican hot tomato sauce
  • sliced fresh mushrooms ( I used a little over half the 8 oz. carton)
  • 1/2 tsp. Mexican oregano
  • 1/2 tsp cumin
  • salt to taste
  • Shredded cheddar (optional)
  • Fresh cilantro (optional)
  • Sour cream (optional) helps cut the "heat"
  • ENOUGH WITH THE OPTIONS!
  • That's all! It's very low fat (basically none w/o the olive oil) so adding the cheddar and light sour cream doesn't hurt a bit.

Directions
  1. Start rice cooking according to directions
  2. In large non-stick pan add olive oil (if using) and onions and bell pepper, saute over medium heat just till al dente (or more if you prefer, we like it a little firm)
  3. Remove and set aside
  4. Add cubed chicken breast and brown till just done - doesn't take long
  5. Here is where I sprinkle Wondra (greatest invention since sliced bread) quick mixing flour over the chicken to absorb the "juices" that come from the chicken - we like a thicker sauce
  6. Add chicken broth and El Pato
  7. Add the cumin and oregano, salt to taste
  8. Add mushrooms and simmer till done
  9. That's it!
  10. Serve atop the rice, top with the cheddar, sour cream, and cilantro if desired
