Ingredients

How to make it

  • Preheat oven to 350 degrees F. Grease two 9x5-inch loaf pans. In a large bowl, combine flour, sugar, poppy seeds, baking powder, and salt. Add eggs, milk, vegetable oil, orange zest, vanilla extract, and almond extract; stir until dry ingredients are moistened.
  • Pour batter into prepared loaf pans. Bake 55 to 60 minutes or until a toothpick inserted in center comes out clean. Remove from oven and place on wire racks.
  • While still hot, using a long-tined fork, poke holes in the top of baked loaves. Pour Orange Glaze over loaves. Cool in pans for 10 minutes; remove from pans. Cool completely before slicing.
  • Yields 2 loaves.
  • ORANGE GLAZE:
  • In a medium bowl, combine powdered sugar, orange juice, vanilla extract, and almond extract; stir until well blended

Made it in a bundt pan which took 60 minutes to bake at 325F (325F because it's a dark pan) Just lightly greased as it's a non-stick pan. I used tips from Diz below in IMI, and used 2 extra T of oil and a little extra almond extract. I used granulated sugar in the glaze and heated it, added the extracts when cool. Poked holes in the top of the cake and drizzled half the glaze over, then removed the cake and brushed the remainder on the other side. Once cooled I drizzled a light glaze over top for presentation. The whole family loved it, especially the kids! I might prefer it with lemon, but it's still great with orange! I didn't bother toasting the poppy seeds either.

This is a wonderful poppy seed loaf with a delicate orange flavor. The glaze gives it a moist, gooey top. I thought the toasted poppy seeds sounded interesting, but I didn't notice much of a flavor difference one way or the other. I'd watch the bake time. Mine was done in 45 minutes. This looks yummy, Peeta, do you think I could sub vanilla for the Almond extract? or maybe even Lemon extract? My youngest has a nut allergy but I love Poppy seeds!
