Fine Freezer Swiss Steak Recipe

Fine Freezer Swiss Steak Recipe
Best Swiss Steak I've ever tasted, from Fine Freezer Food recipe book that we've used since 1966. Makes enough for four meals, four servings each, and freezes beautifully.

Ingredients
  • 4 lbs. round steak
  • 1 cup all-purpose flour
  • 4 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooking oil
  • 1 28-ounce can tomatoes
  • When ready to serve, large onions.

Directions
  1. Cut meat into 16 pieces
  2. Combine flour, salt and pepper. Flour a cutting board with the mixture, place a piece of meat on the board, sprinkle with flour mixture and pound until mixture is absorbed. Turn and repeat with other side. Repeat with remaining meat. If all flour mixture has not been used, Keep adding the flour mixture and pounding it in until all is used.
  3. Heat oil and brown meat on both sides.
  4. Add tomatoes and cook, covered, for one hour or until meat is starting to get tender.
  5. Divide meat and liquid among four containers and freeze.
  6. To serve, defrost a container in refrigerator overnight. Turn into a skillet and bring to a boil.
  7. Cut a large onion into 1/4 inch slices and place on top of meat.
  8. Cook, covered, until meat and onions are tender, about 30 minutes.

Wow, HungryJohn--this is the oldie fashioned way to do it. Pounding the flour into the meat is the best way and boy, is it gooood! We do love our steak & gravy down here. Great posting--thanks!

Sounds good, I think I would add some bell pepper slices along with some oregano with the onions. You have my 5 forks, thanks for sharing.

This really sounds good.
