Chicken Breasts With Artichoke Cheese Stuffing Recipe
CHICKEN BREASTS WITH ARTICHOKE CHEESE STUFFING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991.

Ingredients
  • 4 whole boneless chicken breasts skinned and halved lengthwise
  • 1-1/2 cups shredded pepper jack cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon finely chopped white onion
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon Dijon mustard
  • 6 ounces marinated artichoke hearts drained
  • 1/3 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 2 tablespoons water
  • 1 cup seasoned dry bread crumbs
  • 1/3 cup vegetable oil

Directions
  1. Pound chicken breasts to 1/4" inch thickness then set aside.
  2. Mix cheese, mayonnaise, onion, parsley flakes and mustard in small mixing bowl.
  3. Cut artichoke hearts into bite size pieces then stir into cheese mixture.
  4. Spread 1/4 cup cheese mixture in center of each piece of chicken.
  5. Roll up and secure edges with wooden picks.
  6. Mix flour, salt and pepper in shallow dish then dip rolled chicken in flour mixture to coat.
  7. Mix egg and water in shallow dish.
  8. Place bread crumbs in another shallow dish or on sheet of waxed paper.
  9. Dip rolled chicken in egg mixture then in bread crumbs pressing to coat thoroughly.
  10. Cover and refrigerate coated chicken for 1 hour then preheat oven to 350.
  11. Place oil in rectangular baking dish and place in oven for 10 minutes then remove from oven.
  12. Use tongs to roll coated chicken in hot oil then arrange in pan and bake 40 minutes.
