Easy Spicy Grilled Tilapia With Vidalia Bello Sauce - Ci Recipe

A simple dry rubbed, grilled Tilapia with a rich and creamy mushroom sauce. This is great served with rice or orzo, and I even have an orzo dish posted using the same ingredients as the sauce! :)

Ingredients
  • 6 Tilapia fillets
  • 1T garlic powder
  • 1T onion powder
  • 2T paprika
  • 1-2t cayenne(I use a T :)
  • 2t dry herb of your choice(parsley, thyme, sage, basil, etc)
  • 1t brown sugar
  • 1t kosher or sea salt
  • 1t fresh ground pepper
  • 1 lemon or lime
  • 2T butter,melted
  • Vidalia Bello Sauce:
  • 12-16oz baby portobello mushrooms, roughly chopped
  • 1 medium vidalia onions, chopped
  • 2 cloves garlic, minced
  • 1/2 stick butter
  • 1T cornstarch
  • 1/4 cup chicken stock or white wine
  • 1 cup half and half
  • pinch of fresh nutmeg, grated
  • 1/4-1t cayenne(for your taste--I use a full t, easy)
  • kosher or sea salt, and fresh ground pepper

Directions
  1. Rinse and pat dry fish fillets.
  2. Add juice from 1 lime, or 1/2 lemon to melted butter and drizzle over fillets.
  3. Combine all dry ingredients, crushing slightly, if needed, for smooth texture, and sprinkle over both sides of each fillet.
  4. Grill over medium coals for about 4 minutes, each side, until fish is white, and flakes easily. DO NOT OVER COOK
  5. For Sauce:
  6. Saute mushrooms, onion and garlic in butter until tender.
  7. Add cornstarch til combined with the butter. (this will be "ugly" at this point, and look slightly clumpy, but it's okay)
  8. Add stock or wine and cook, stirring, until smooth and heated through.
  9. Add half and half, nutmeg, salt and peppers, and cook until heated through and thickened. If a thinner consistency is desired, add more stock or wine 1T at a time.
  10. Spoon sauce over fillets, to serve.
