Pea Dip With Parmesan Recipe

Ingredients
  • 3 cups peas ( frozen are fine )
  • 1 cup vegetable stock or water
  • 3 Tbs toasted pine nuts
  • 1 cup fresh grated Parmesan cheese
  • 1/2 tsp minced garlic
  • 1/4 cup fresh chopped mint or to taste (I prefer cilantro )
  • 2 Tbs extra virgin olive oil
  • salt and pepper to taste

Directions
  1. Cook peas with stock or water halfway up to cover them in pan.
  2. Cook 3 minutes or peas tender and yet bright green
  3. Put all but one cup of peas in food processor
  4. Puree, transfer to bowl and stir in remaining peas
  5. Add nuts, cheese, mint, garlic and olive oil.
  6. salt and pepper totaste
  7. Thin with more liquid if needed to desired consisitency
  8. Variation: 3 cups cooked edamame, 2 Tbs miso, 2 Tbs water,1 tbs ginger, 1 Tbs rice wine vinegar and blend smooth in food processor
