Fruit Cocktail Cake Recipe
An old french-canadian recipe made with many on-hand ingredients. Very easy to make.

Ingredients
  • 1 1/2 c. sugar
  • 2 eggs
  • 1 can fruit cocktail (19 0z.)
  • 2 c. flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • SAUCE
  • 1/2 c. butter
  • 1 c. Carnation Evaporated Milk
  • 1 c. sugar
  • 1 tsp. vanilla

Directions
  1. preheat oven to 350'
  2. run the fruit cocktail a few seconds in a food processor
  3. mix fruit cocktail, sugar and eggs
  4. mix flour, salt and baking soda
  5. blend dry ingredients into fruit cocktail mixture
  6. pour into 13 by 9 baking pan and bake approx. 30 min. or when toothpick comes clean when inserted
  7. While cake is baking, blend butter, carnation milk, sugar, and vanilla in a saucepan.
  8. Stir, and bring to a boil over medium heat
  9. Boil for 5 minutes
  10. Pour sauce over the cooled cake
