This is a potato salad recipe that's enhanced by Indian ingredients. It goes well with traditional Indian food or with American food. I tasted a fabulous version of this in a restaurant in Houston and this is my attempt at emulating it. Hope you en... More

Ingredients
- 4 potatoes, skinned, boiled, drained, cubed
- 2 cloves of garlic, minced
- 1 onion, minced
- 1-2 chilis (according to taste) minced, or chili powder
- 1 t corriander
- 1 t cumin
- 2-3 tbsp oil (enough to coat your pan)
- 3-4 tbsp mayo
- lemon juice to taste
- salt to taste
- cilantro to taste
- additional: if you have chaat masala or garam masala that's perfect to put into this as well
Directions
- Heat oil
- When the oil is hot, add the onions and garlic
- Add the corriander, cumin, and chilis
- Cook until the onions are transulcent
- Mix the spices with the mayo; add cilantro, salt and lemon juice to taste
- Spoon the mayo mixture into the potatoes a little at a time

Mmmm I'm German and I posted a German hot potato salad Recipe up. I will have to try Indian Potato salad. They are very different.
