Grilled Fish In Foil

- 1 to 1-1/2 lbs scrod,haddock,sole ,bluefish or salmon fillets shopping list
- 1 green,yellow or red bell pepper,chopped shopping list
- 1 med. ripe tomato,chopped shopping list
- 1 to 2 carrots,grated or chopped shopping list
- 1 to 2 Tb olive oil or melted butter shopping list
- 1 tsp fresh lemon juice shopping list
- 1 tsp chopped parsley,dill or oregano shopping list
How to make it
- Cut a piece of heavy duty foil to about 12x18". Grease lightly or spray with cooking spray.
- Combine vegetables and place on foil. Top with fish. Sprinkle with lemon juice,oil or melted butter,chopped parsley,dill, basil or oregano etc. Fold up foil to make a package on hot grill. Cook about 15 mins or till fish flakes.
