  • Ingredients:
  • 4 large Zucchini ( about 2 pounds )
  • 2 Medium size onions, sliced
  • 2 sweet or hot Italian sausages
  • ¾ cup water
  • 1 pkg. ( 8oz ) part skim Mozzarella cheese sliced
  • ¼ Lb. Mushrooms sliced
  • 1 ½ tsp. Salt
  • 1 tsp. Leaf oregano crumbled
  • ½ tsp. Garlic powder
  • ½ tsp. Sugar
  • ¼ tsp. Pepper
  • 1 large can ( 1Lb. 4 oz ) Tomatoes in Puree
  • ½ cup low-fat Ricotta cheese

Directions
  1. 1)Trim zucchini: cut into very thin lengthwise slices with a very sharp knife.
  2. 2)Place onion slices and Italian sausage in a large skillet with water; cook over medium heat, stirring often, until water evaporates; then stir constantly until onion slices are golden; remove from heat; chop up sausage.
  3. 3)Layer one-third of the zucchini slices in a 8-cup shallow casserole; top with part of the cheese and mushroom slices. Combine salt, oregano, garlic powder, sugar and pepper in a cup; sprinkle part over; layer with one-third og the onion-meat mixture and tomatoes in puree. Repeat to make 3 layers; cover casserole with aluminum foil.
  4. 4)Bake in moderate oven ( 350º) for 40 minutes; remove foil; bake 20 minutes longer, or until zucchini is tender and casserole is bubbly. Spoon ricotta on top. Let stand 10 minutes before serving.
  5. Suggested Variations: A cup of diced cooked Chicken or ½ Lb. Ground Sirloin can be substituted for the Italian sausage in the recipe. To save a few more calories, use low-fat cottage cheese rather than the ricotta on top.
