- 2 medíum eggplants shopping list
- salt, black pepper to taste shopping list
- 4 garlic cloves shopping list
- 4 tomatoes shopping list
- 5 tablespoons olive oil shopping list
- 1/2 teaspoon paprika shopping list
- 1/2 teaspoon cumín shopping list
- 1 tablespoon parsley and coriander chopped shopping list
How to make it
- Peel eggplants, cut roughly, salt then poach with garlic over low heat.
- Drain and preserve.
- Hull, blanch and de-seed tomatoes.
- Cut into pieces and cook in pan with oil, cumin, paprika, salt and pepper.
- You may add can tomato to thicken sauce and bring out taste.
- Once sauce reduced, add parsley, coriander, eggplant cubes and garlic.
- Crush them when smooth with a wooden spatula
- Serve warm.
