How to make it

  • Peel eggplants, cut roughly, salt then poach with garlic over low heat.
  • Drain and preserve.
  • Hull, blanch and de-seed tomatoes.
  • Cut into pieces and cook in pan with oil, cumin, paprika, salt and pepper.
  • You may add can tomato to thicken sauce and bring out taste.
  • Once sauce reduced, add parsley, coriander, eggplant cubes and garlic.
  • Crush them when smooth with a wooden spatula
  • Serve warm.
