Ingredients
  • 2 large ripe but firm tomatoes , rinced , cut and discard seeds , diced
  • 1 large onion , peeled , rinced and finely diced
  • 200 gr original Feta cheese , pressed broken with a fork
  • 1 fistful fresh parsley , rinced , finely chopped
  • 3 tbsp fresh spearmint , rinced , finely chopped ( or 2 dried )
  • 1 tsp throubi or oregano
  • 1 egg
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • salt and pepper to your taste , keeping in mind that Feta is salty too
  • 1/2 cup extra virgin olive oil
  • 1 mug flour all purpose
  • 1 cup finely blendered dry bread crumbs
  • olive oil for frying

Directions
  1. In a bowl , mix all ingredients together ( except oil for frying , of course )
  2. thouroughly yet gently with a spoon until you get an almost non sticky brothy dough .
  3. Do not knead , only stir !!
  4. Preheat oil in your pan at a medium-high temp ( 7 out of 10 ) .
  5. Dip your spoon in a glass of water that you have placed near you , and scoop some dough .
  6. Gently let it down in oil and QUICKLY continue until pan is almost ful
  7. By the time you have filled your pan , you should be turning the first one over to the other side . Anyway , fry until golden brown on both sides .
  8. Place the fritters on oil-absorbing paper .
  9. Serve hot and enjoy .

Thank you so much HH. This is the recipe I asked about, as I wanted an original. (I think the computer had too much ouzo.) This would be great with a dollop of Greek yogurt or tzatziki.
