Ntomatokeftethes Tomato Fritters

- 2 large ripe but firm tomatoes , rinced , cut and discard seeds , diced shopping list
- 1 large onion , peeled , rinced and finely diced shopping list
- 200 gr original feta cheese , pressed broken with a fork shopping list
- 1 fistful fresh parsley , rinced , finely chopped shopping list
- 3 tbsp fresh spearmint , rinced , finely chopped ( or 2 dried ) shopping list
- 1 tsp throubi or oregano shopping list
- 1 egg shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp paprika shopping list
- salt and pepper to your taste , keeping in mind that feta is salty too shopping list
- 1/2 cup extra virgin olive oil shopping list
- 1 mug flour all purpose shopping list
- 1 cup finely blendered dry bread crumbs shopping list
- olive oil for frying shopping list
How to make it
- In a bowl , mix all ingredients together ( except oil for frying , of course )
- thouroughly yet gently with a spoon until you get an almost non sticky brothy dough .
- Do not knead , only stir !!
- Preheat oil in your pan at a medium-high temp ( 7 out of 10 ) .
- Dip your spoon in a glass of water that you have placed near you , and scoop some dough .
- Gently let it down in oil and QUICKLY continue until pan is almost ful
- By the time you have filled your pan , you should be turning the first one over to the other side . Anyway , fry until golden brown on both sides .
- Place the fritters on oil-absorbing paper .
- Serve hot and enjoy .

Thank you so much HH. This is the recipe I asked about, as I wanted an original. (I think the computer had too much ouzo.) This would be great with a dollop of Greek yogurt or tzatziki.
