Ingredients

How to make it

  • Preheat oven to 350 degrees F (175 degrees C)
  • Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt.
  • In a separate bowl, cream together butter and brown sugar.
  • Stir in eggs, mashed bananas, and nuts into creamed butter until well blended.
  • Stir banana mixture into flour mixture; stir just to moisten.
  • Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.
  • Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

    I am going to try this today. Lately when i bake hearty sweet breads I have been replacing 1/2 of the all purpose flour with a homemade oatmeal flour when doing this you need a bit more liquid, I add 2 TBLS of 1 or skim milk and an extra small/med banana or if zuchini bread a 1/2 of a small zuc and 2 TBLS milk. As said earlier.... ADD NUTMEG and cinnamon. just a bit of both. I also suggest 1/4 cup more walnuts and doing a course ground pecans (if you have them) dusting on top. Can't wait to start this bread... I will let everyone know if it turns out moist.

    I live in the Czech Republic and the only recipe I have is from an old British cookery book. It looks very similar although not the same. I will try this one definitely as I really love Banana Cake.

    Made muffins with batter pre-heated oven to 450 degrees then after adding muffin to oven reduced heat to 425 degrees cooking for 18 minutes. The results Fantastic with cream cheese!!!!!

    I made this into muffins and it yielded 12. They took about 25 minutes to bake through. I didn't mix nuts into the batter, rather sprinkled toasted chopped pecans on top. They are yummy and not too sweet. Thank you!

    I soak the nuts in rum for 15 mins prior to adding them and also add a bit of cinnamon for flavor.

    Thought this recipe was delicious. Needed a good recipe for those over ripe bananas and this was the best. Took LoveSweets suggestion and increased the bananas to 4, added vanilla, cinnamon and nutmeg. Outstanding, thank you for posting this recipe.

    My hubby and I had a taste for some Banana Bread tonight after having some at Bob Evans last night with some good friends (Banana Bread & Green Tea). So I tried this recipe and used 100% Whole Wheat Flour vs Enriched White Flour. I also added 5 medium size bananas, vanilla, nutmeg & cinnamon, and margarine vs butter. SIMPLY AMAZING! MOIST, TASTY & MELTS IN YOUR MOUTH. PLUS...it's so much healthier than the white flour. I've saved the recipe and look forward to another loaf over the weekend. TRY IT you won't be disappointed.
