Roast Chicken with Lemon Tarragon Butter

- 1/2 stick butter, softened shopping list
- 1 tsp. finely grated lemon zest shopping list
- 1/2 tsp. dried tarragon, crushed shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. pepper shopping list
- 3-4 lb. chicken parts shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 500
- In mixing bowl, combine butter, lemon zest, tarragon. and salt and pepper until blended
- Loosen skin on chicken by working your fingers between skin and meat, keeping skin attached on one side
- Rub butter under skin of each piece of chicken
- Put skin back intact
- Rub remaining butter over skin
- Season with salt and pepper
- Bake in roasting pan for 30 minutes
