Type of Cast Iron Skillet?

    I want to buy a cast iron skillet, but i dont know what kind to buy and i dont want to get a low grade one that wont last either, anyone have any ideas?

    Don't forget to season your cast iron skillet once you purchase.

    First you need to wash it really well with hot water and soap and a brush.

    One you do that, coat the whole pan with oil. I usually use vegetable shortening just because my Mom did.

    Heat your oven to 400 degree F or so. Turn pan upside down and bake for an hour. Oh put some aluminum foil on the bottom of the oven for the dripping. I learned that tip from the internet. Too long I wasn't smart enough to figure out to line it. haha

    Also, I inherited a nice set of cast iron cookware from my sweetie's Aunt Ruby. I checked the back of each piece for markings. One skillet says Lodge, most of the older looking pieces have a single letter or a letter and a number. The lids don't have any markings. One skillet says "Wagner's 1891 Original Cast Iron Cookware" and also has directions for seasoning stamped right on the back of the skillet.

    SEASONING INSTRUCTIONS
    1-Scour thoroughly
    2-Coat with cooking oil
    3-Heat in 300 degree oven-1 hour
    4-Remove excess oil
    Ready for use-Reseason as necessary.

    I'm sure this particular skillet is not old, as I have seen this brand available for purchase recently.

    i dont have any brand name cast iron. in fact a couple are printed with made in taiwan, and they all work the same. ive noticed there are two sorts. one must be a plain cast iron that is to say-molded. and the other better one seems to be machine honed inside for a smoother finish. and that is much nicer because the cooking surface stays smooth and cleans up really nicely. also, i agree on curing technique above and i would add 5-cook in the skillet. cook apples or cabbage and then wipe and repeat with the oil and if it was a rusty skillet that will help pull out more of the rust. later i will put up a recipe for a simple apple oatmeal bread for this purpose.holly
