Tortilla Crusted Chicken, Potato Wedges w Cilantro Lime Mayo

    Made for April 2020's "Pantry Staple" Recipe Challenge

    This post is for two recipes, but I thought one post would be better as they go together perfectly!

    I was looking for cumin roasted potatoes and came across this recipe. Pat says in the description that it can be roasted along with Tortilla Chicken Drumsticks, and the dip works with both. But I had no drumsticks, only chicken breasts. So I came across this recipe from Chefmeow, that is very similar to the drumsticks, but I had to adjust the baking temp. to accommodate both recipes. I also made both recipes twice, but tweaked them the first time with what I had on hand, and this time I followed the ingredients exactly.

    Firstly, the potato wedges with lime dipping sauce is awesome! Having only oregano, cumin and olive oil--it was simple but so good, even without the dipping sauce. The only thing I added was a sprinkle of sea salt when they came out of the oven. The first time I made it I didn't have the lime or fresh cilantro so I used lemon, dried cilantro and green onions, we all loved it that way! The only thing I would change is to use less lime zest, 2 tsp's was too much for me, the lime zest really overpowered the cilantro. I even added an extra tablespoon of cilantro but it still overpowered---and I would use a little less sour cream, but it was still delicious, especially with the chicken!

    The first time I made the chicken I had no tortilla chips, but I did have corn flakes. So I used that and added a little bit of salt (obviously the tortilla chips have plenty of salt). And since tortilla chips are usually deep fried, I brushed the chicken breasts lightly in olive oil instead of dipping in the beaten egg. They turned out fantastic that way and super yummy! This time I used the tortilla chips and egg and it was still fantastic. The cornflakes and oil make a lighter crisp coating, and the tortilla/egg was a little chewier.

    I started by roasting the potatoes at 450f for 10 minutes, on the lower rack. Then turned the oven down to 400f and baked the chicken on the top rack for 20 minutes--so they were both done at the same time. The chicken was perfectly cooked and juicy, and the potatoes were still crisp on the outside despite the lower temp.
    Both are excellent recipes and go so well together! The dipping sauce was also a great dressing over some iceburg lettuce, tomato and cucumber.

    Well this sounded so yummy that I picked up the ingredients a few days ago so I could make it. I used 4 B/S chicken thighs and a small pkg. of Doritos. It was pretty much exactly the right ratio. We enjoyed the chicken but as Shona says, the tortilla coating is a little chewy. I wouldn't bother making it again although kids who like Doritos would probably love it. You could cut it in strips that they could dip in salsa and they'd be happy little campers. :)

    We really enjoyed the potatoes and I like the flavour profile. I set the oven temperature at 375F, put the potatoes in for 20 minutes ahead of the chicken and then put the chicken in and continued to cook for another 40 minutes and it worked great.

    I didn't bother with the dipping sauce as neither hubby nor I are big fans of sour cream. Fun to try. Thanks for the inspiration Shona!
