How to make it

  • Coat rectangular baking pan with cooking spray and set aside.
  • In shallow dish combine tortilla chips, oregano, cumin and pepper.
  • Place egg in another shallow dish and beat slightly.
  • Dip chicken in beaten egg and coat with tortilla chip mixture.
  • Arrange chicken in prepared pan then bake at 375 for 25 minutes.
  • Pour salsa over chicken right before serving.

    Made this for dinner last night. Kid's who love Nacho chips would love it. :) I used a small package of Doritos and four B/S chicken thighs. I cooked the chicken for 40 min. at 375F and it turned out well. The salsa is nice over top. It was yummy! More in IMI11

    This time I followed the recipe exactly, using the tortilla chips and egg dip. I baked them at 400f for 20 minutes, on the top rack as I had Roasted Potato Wedges With Cilantro Lime Mayonnaise roasting on the lower rack. The dip from that recipe was excellent with the chicken! (note: I trimmed and pounded the chicken breasts flat before coating in the tortilla chips)

    This was awesome!! I didn't have tortilla chips so I used crushed cornflakes and added salt, it turned out fantastic. Instead of egg I just brushed the chicken in olive oil and it turned out great. Had I used tortilla chips I would have done the egg dip--so I will I try it that way next time!
