Roasted Potato Wedges With Cilantro Lime Mayonnaise Recipe

Thick-cut seasoned potatoes can be roasted along with tortilla chicken drumsticks(posted). The mayo works as a zesty dip for both,so you may want to double amount.This is from Gourmet!

Ingredients
- For Potatoes:
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 3 Tbs olive oil
- 2 lbs. baking potatoes(about 4 med.) each cut into 8 wedges.
- For Cilantro Mayonnaise:
- 1/2 cup moyonnaise
- 1/2 cup sour cream
- 2 Tbs finely chopped cilantro
- 2 tsp grated lime zest
- 1 Tbs fresh lime juice
Directions
- Roast potatoes: Put a 4-sided sheet pan in lower third of oven and preheat to 450.
- Stir cumin,oregano,and 3/4 tsp salt into oil in a large bowl. Add potatoes and toss. Arrange potatoes,cut side down in 1 layer in hot pan and roast,turning once,until golden,about 40 mins.
- Mayonnaise: Stir together mayonnaise,sour cream,cilantro ,lime zest and juice ,and 1/4 tsp. salt in small serving bowl. Serve potatoes with mayonnaise

This recipe is straight out of the May 2009 (current) edition of Gourmet, including the comment. Page 78. And there is a Tortilla Chicken Drumstick recipe that goes with it. Made both last night from the magazine. It is good.
