How to make it

  • Roast potatoes: Put a 4-sided sheet pan in lower third of oven and preheat to 450.
  • Stir cumin,oregano,and 3/4 tsp salt into oil in a large bowl. Add potatoes and toss. Arrange potatoes,cut side down in 1 layer in hot pan and roast,turning once,until golden,about 40 mins.
  • Mayonnaise: Stir together mayonnaise,sour cream,cilantro ,lime zest and juice ,and 1/4 tsp. salt in small serving bowl. Serve potatoes with mayonnaise

    The potato wedges were yummy Pat! :) The oregano/cumin mixture is a nice flavour. I didn't make the dip as neither Jim nor I are big sour cream fans but they were yummy even without it! More in IMI11

    Made it again, and followed the cilantro lime mayo exactly as written and it was delicious! The only thing I might change slightly is to use less lime zest and a little less sour cream. Served it with Tortilla Crusted Chicken and the dip was excellent with the chicken!
    I cooked the potatoes at 450f for 10 minutes, then turned the heat down to 400f and cooked for 20 minutes and the potatoes were perfect, again! I sprinkled the potatoes with a little sea salt when fresh from the oven (I didn't use any before roasting).

    Delicious!! The flavour on the potatoes was fantastic, the whole family loved it! I baked this with chicken breasts, so I turned the heat down after 10 min.to 400F and it only took 30 minutes to cook. They were still nice and crisp!
    I had to make do with what I had on hand for the dip, I couldn't get fresh cilantro so I added a little bit of dried, as well as fresh green onions and lemon instead of lime--so it was quite different but still tasted great! Next time I will follow the recipe and report back!

    Yum! These were so good! I did not make the sauce but used Bearnaise instead. I also added 2 garlic cloves and 1/2 a small onion (cut in large chunks). Very flavorful! Thx for sharing.

    This recipe is straight out of the May 2009 (current) edition of Gourmet, including the comment. Page 78. And there is a Tortilla Chicken Drumstick recipe that goes with it. Made both last night from the magazine. It is good.
