Bacon and Egg Maple Burger With Tarragon Sauce

    I had to change up a couple things to meet my needs, but nothing major :) No bun, no cheese, that's it lol. I did make my own mayo for the sauce, it's super easy, here is the recipe http://nomnompaleo.com/post/3440774534/paleo-mayonnaise. The sauce is delicious btw :) I didn't have the maple extract for the meat (I used ground venison) so she had mentioned using maple syrup at my own risk so I did and I didn't find it overpowering at all, actually I would have liked a little more maple flavor. Next time I will find the extract. I chose not to wrap the bacon around the burger and just serve it up on top. We really enjoyed these and all the wonderful mix of flavors :)

    That's a beautiful burger Michelle, and a beautiful picture of a beautiful burger! Look how perfect your egg is on top and you used a quail's egg didn't you? How did you cook it? I find it so hard to break the shell of a Quail's egg without breaking the yolk in order to even get it into the frying pan.

    Lol Janet it's not a quail egg, I just trimmed up a regular eggs whites to fit on the burger nicely for the pic :) I have my quail eggs awaiting your Buffalo Chicken Deviled Eggs probably tomorrow. I'm going to put my steady hand to the test :)

    I'll have to pick up some of that extract. You should try that recipe link I posted Points, it works great :)

    Thanks Frankie, I have had my share of burgers with an egg on top, but this is the first one I've made myself, so good!
