Bacon And Egg Maple Burger With Tarragon Sauce

For tarragon Sauce
- 1 cup mayonnaise shopping list
- 2T Dijon mustard shopping list
- 1-2T fresh tarragon leaves, minced shopping list
- 2T fresh chives, minced shopping list
- dash of worcestershire sauce shopping list
For Burgers
- 2lbs ground beef(or venison or a combo) shopping list
- 1/2lb thick cut smoked bacon, cooked but not crisp* shopping list
- 2t worcestershire sauce shopping list
- few drops of liquid smoke shopping list
- 1t maple concentrate(not maple syrup unless you really want these sweet, then you could add a couple T of that... but, I can't vouch for that :) shopping list
- 1-2T quality mustard shopping list
- several dashes hot sauce shopping list
- 2T butter, melted(optional, but I use lean meat by using venison and a lil fat helps a lot) shopping list
- 6 eggs, fried(however you like to fry them... I just use a lil butter and salt and pepper, over easy) shopping list
- fresh ground pepper and kosher or sea salt shopping list
- 6 thick burger/sandwich buns shopping list
- fresh romaine, spinach or leaf lettuce shopping list
- thinly sliced onion shopping list
- fresh tomato slices shopping list
- 6 slices cojack cheese shopping list
How to make it
For Tarragon Sauce
- Combine all ingredients and refrigerate until ready to use
For Burgers
- Combine ground meat, Worcestershire sauce, liquid smoke, maple concentrate, mustard, hot sauce, butter and salt and pepper and mix well, but careful not to "over mix"
- Shape into 6 1/3lb burgers patties
- Wrap a piece of bacon around each patty, securing with water soaked toothpicks, if needed
- Grill burgers until done to preferred liking(we don't like them over medium, so they only cook a few minutes/side over a hot grill)
- Add a slice of cheese at the end of cooking time just to let it melt.
- Build burgers with all the condiments desired, top with an egg, and the tarragon sauce.
- * alternately, just cook the bacon til crisp and serve it on the burgers instead of wrapping around them!
