    Best Banana Bread
    I was hesitant to rate this as I was forced to make a few changes but in the end I decided that those changes did not change the basics of this recipe--it’s a goody. It was already in the IMI group and I added a photo to the recipe. Really wanted to use a fancy piping of whipped cream for the photo but its 105° outside and that just wouldn’t last longer than removing the lens cap!
    I used four 5” x 3” mini pans and they worked very well and were very full so ended up with a nice dome.
    Saw a thing on TV that said to microwave the whole bananas for about 2 ½ minutes (until they were warm) and that would bring out the banana flavor more. I only made one batch so I can’t compare side by side but I did zap them a bit.
    Ended up using whole wheat flour as that is what I had.
    I added chocolate chips as I was ordered to by Mr. Breezy :-).
    I was surprised to find I only had about half the amount of sour cream that was called for and not really knowing what to use (quickly) as a substitute, I used half cream cheese and half milk for the remaining amount.
    Went for the topping variation using the brown sugar and am glad I did as it was wonderfully crunchy.
    Finally I used half frozen and half very ripe bananas with no problem.
    I guess the fact that I would make this recipe again pretty much says it all.

    Nuking bananas will bring out the juice. Unthawing frozen bananas will also bring out the juice. Using a juicer, unfortunately, does nothing. Banana juice has a powerful flavor and especially if it's reduced down too.

    Oh, that topping looks really good! I've never tried a topping on banana bread. I also didn't know that about microwaving bananas. Thanks for the tip! I love the picture.

    I always use frozen thawed bananas in my baking and always notice the juice but never knew it was adding even more flavor! That's some great looking bread!
