    Earlier in the week, I read an article online on how to poach an egg in the microwave. Put 1/2 cup of water in a coffee cup, put the egg (out of the shell!) in the water, cover the cup with a saucer and microwave for one minute on high. This poached egg lover wanted to try that!! But, no bread around. What to put it on? After looking in the refrigerator, I did a search here using "corn tortilla" "beans" and "egg." This recipe popped up. It was exactly what I was looking for! I don't do sour cream and there was no mention in the recipe of what to do with "favorite spice" so I put it in the beans. Oh - and by the way - the microwave poached egg came out perfectly. Definite success. This isn't pretty when its all chopped up and mixed together but it sure tastes good!

    I LOVE that you just shared that microwave poached egg technique!! I have tried poaching eggs once and it did not work out, and I hate the fact that you have to get this big pot of water boiling. Yum on your picture, I could have one of those right now!

    In the video he was a little rushed so the egg in the bowl looked a little sloppy but on the show the pre-made ones looked nicer. I think the microwave method sounds better for the hot summer months and maybe easier.
