Brunch Oven Omelet-si

    I made Keni's
    Brunch Oven Omelet Si
    for breakfast this morning. I'd never actually cooked an omelette in the oven before and I must say that if one were having a group of people over, it certainly requires less fuss and watching. You just have to mix it all up and then throw it in the oven and while you put out the O.J. and set the table, it cooks itself.
    I had some cremini and shitake mushrooms to use up and this did the trick, used a combo of Mozzarella and Parmesan for my cheese. Thought the Dijon was a nice addition and used ham. Since there were only 3 for breakfast I halved the recipe and used an 8x8 dish. Everyone gave it a total thumbs up.

    You know, I thought it may have been a typo but she made no mention of using a cast iron skillet in the recipe. In fact it says to our from pan to a baking dish which you wouldn't need to do with a cast iron pan. Perhaps she wanted to make the recipe more user friendly and just assumed someone seeing CI would know that cast iron could be used.
